Uno, Dos, Tres
I plan to keep a running list of our favorite drinks at Olmos Home. We like to experiment and there is always something new popping up. There are a few that we come back to time and time again. The “Uno, Dos, Trés” is one from the Death & Company cocktail book that was created by Joaquín Simó in 2009.
This cocktail is really where my journey took a turn from casual cocktail consumer into the world of cocktail enthusiast. I had started frequenting a number of fantastic bars and was spending time around some great bartenders. The idea that you could take the idea of a Negroni and meld it with Tequila and an artichoke spirit just floored me. It was one of my great early taste experiments. It also taught me the graciousness of a truly great bartender (in this case David Naylor) who got into the idea as well. He had all the ingredients (including the infusion) waiting to make one of these the next time I stepped into Park Social.
This is always a cocktail I am ready to serve at Olmos Home and we like to experiment with a bit of mezcal in the mix - and can’t help but overpour on the Cynar. Here is the formula as originally developed:
- 1 1⁄2 ounces reposad Tequila
- 3⁄4 ounces grapefruit-infused Punt e Mes
- 1⁄2 ounce Campari
- 1⁄4 ounce Cynar
1 dash Bittermen’s Xocolatl Mole Bitters
Garnish: 1 orange twist
